WHere is a simplified take on a drink found on the seasonal cocktail list. This is a party-sized prepared mix that's bursting full of flavours associated with holiday season, which makes it perfect for hosting a festive gathering. Any leftover syrup for morning drinks, puddings, or to make more rounds of bikinis.
Bikini Recipe
Makes enough for 10 guests
For the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g caster sugar
Ingredients for the Drink (produces 850ml, to serve 10)
400ml premium vodka
100ml classic gin
150ml peach liqueur
200ml clementine cordial (from the recipe above)
Whole cranberries, as a garnish
Mandarin essential oil, as a final touch
Method
To prepare the Cordial: Put the listed components in a pot, heat until it reaches a gentle boil, mixing until the sugar dissolves. After that, remove from the stove and let it to reach room temperature fully. Decant into an sealable bottle, close it and refrigerate it in the refrigerator, it will last for around a month.
Preparing the Batch Mix: Pour the specified liquids in a big jug, allow it to infuse for an hour, then filter it , ideally through a fine cloth, making it perfectly clear.
When ready to serve: Measure 85ml of the premix to a cocktail shaker containing ice, and agitate carefully for about 60 seconds until cold. Filter to a frosted cocktail glass or equivalent, garnish with some cranberries and finish by giving it a quick spritz of the essential oil above the glass.
